Accounting for Product Substitution in the Analysis of Food Taxes Targeting Obesity AgEcon

We extend the existing literature on food taxes targeting obesity. First, we incorporate the implicit substitution between sugar and fat nutrients implied by a complete food demand system and by conditioning on how food taxes affect total calorie intake. Second, we propose a methodology that accounts for the ability of consumers to substitute leaner low-fat and low-sugar items for rich food items within the same food group. This substitution is integrated into a demand system in addition to substitution among food groups. Simulations of a tax on added sugars show that the impact of the tax on consumption patterns is understated and the effect on welfare loss overstated when abstracting from this substitution within food groups.

Adjustments in Demand During Lithuania's Economic Transition AgEcon

Significant economic changes have occurred in Lithuania since 1992. Major market reforms were introduced through phased liberalization of producer and consumer prices. Panel data from a Lithuanian Household Budget Survey conducted during 1992-94 were used to estimate demand parameters for aggregated commodity groups. The evidence from the household survey shows the relative stability of demand parameters. Estimated price and expenditure elasticities are consistent with levels of low income countries. Households have been relatively responsive to changes in prices and total expenditure in their purchases during the period of transition.

The labor supply decision under wage uncertainty is studied in the context of an agricultural household model. The recent sharp growth of post-Soviet subsidiary subsistence agriculture is consistent with the model predictions of an increase in farm labor supply in response to the fall and uncertainty in real wage.

Economic and welfare program factors affect the well-being of low-income families and their labor supply decisions. This study uses data from the U.S. Survey of Income and Program Participation. A nested logit model is estimated to explain the joint decisions to participate in Temporary Assistance for Needy Families (TANF) and the labor market for the population of families potentially eligible for TANF. The empirical findings indicate that higher wages increase labor and decrease welfare program participation; an increase in nonlabor income decreases both labor market and welfare participation.

Over the last decade, new information has been developed and collected to measure the extent of food insecurity and hunger in the United States. Common measurement of the phenomenon of hunger and food insecurity has become possible through efforts of the U.S. Department of Agriculture (USDA) to develop a set of survey questions that can be used to obtain estimates of the prevalence and severity of food insecurity. The 1991 Latvia household budget survey provided data for establishing basic information about food consumption levels and patterns in Latvia during the first year of major economic reforms. This study evaluates one aspect of economic decision making of households: how income is allocated for consumption of various broad categories of food items. The analysis uses the 1991 data to examine the importance of income and household composition on food expenditures. Estimated income elasticities for various food commodities suggest the magnitude of changes in real household income that have occurred in Latvia. Bayesian Estimation of a Censored AIDS Model for Whole Grain Products AgEcon

When using household-level data in examining consumer's demand it is common to find that consumers purchase only a subset of the available goods, setting the demand for the remaining goods to zero. Ignoring such censoring of the dependent variables in the estimation can lead to biased parameter estimates. In this paper we investigate the household's demand for six types of whole grain and non-whole grain breakfast cereals and products using a censored Almost Ideal Demand System (AIDS) and estimate the parameters of the demand system via Bayesian methods. Cognitive Dissonance as a Means of Reducing Hypothetical Bias AgEcon

Hypothetical bias is a persistent problem in stated preference studies. We propose and test a method for reducing hypothetical bias based on the cognitive dissonance literature in social psychology. A central element of this literature is that people prefer not to take inconsistent stands and will change their attitudes and behavior to make them consistent. We find that participants in a stated preference willingness-to-pay study, when told that a nonhypothetical study of similar goods would follow, state significantly lower willingness to pay than participants not so informed. Consumer Choices and Welfare Gains from New, Healthy Products: A Virtual Price Approach AgEcon

This paper models consumer food choices with respect to different margarine and spread brands that include a new healthy brand. The results show that the older and smaller size households with higher income and higher education are more likely to purchase the healthy brand. An Almost Ideal Demand System for six brands was estimated and the coefficients were used to calculate price and brand expenditure elasticities in order to examine the responsiveness of the consumers to economic variables.

The main objective of this paper is to identify factors that determine consumers’ purchase decisions for ground beef offered with different packaging technologies. Consumers’ increasing knowledge about food technologies and changes in food labeling regulation influence agribusiness’ future product development and marketing strategies.
